The Salmon Knife, olive wood handle, is chosen by the Chef and the fisherman alike to thinly fillet and slice salmon.
This dimpled blade, 300 mm long and 26 mm wide, is very flexible and narrow, which creates small air pockets, so even the finest slices do not stick to the blade and get ruined.
The knife is made in stainless steel W4110 hot forged, around 1060°-1080° and 55 HRC of hardness.
The heat treatment developed and jealously guarded by the company makes each type of knife different each other because the values of hardness and resistance of the edge and the flexibility of the blade varies, therefore each knife has the best characteristics for its specific use.
