Acacia Honey Gubanotto
Gubanotto is a modern take on a classic local dessert from Friuli (northeastern Italy): gubana. It's a sweet roll of pastry, expertly layered with honey, dried fruit, herbs, and sultanas. The crispy crust, which develops during baking, keeps the inside of the cake moist.
As children, we enjoyed separating the crust from the inside, making a lovely roll with the pastry, which is rich in granulated sugar: finger-licking good! It's a dessert that brings back memories of family snacks, and for adults, it can also be served "drenched" in grappa.
