The Teas
It is a drink made from plants that belong to the Camellia family
- Sinensis (China) with small, tender leaves;
- Assamica (India), with larger leaves.
The variable amount of theine/caffeine determines its stimulant properties.
It is prepared by infusion
The four different processes of the leaves determine the types of tea:
- Black, which passes through four processing phases: drying, rolling, oxidation and drying.
- Green, whose leaves are steamed or cooked in a wok to interrupt the oxidation process, which gives it its characteristic green color.
- Oolong, with intermediate characteristics between black tea and green tea because it is semi-oxidized.
- White, a rare variety, because it is harvested only once a year, when the first buds and the highest leaves of the plant are harvested.

The herbal tea
it is a mix of different ingredients and consists of three different elements:
- The basic remedy (remedium cardinale): the element that provides the active therapeutic ingredient:
- The synergistic remedy (adjuvants), which assists the absorption of the basic remedy;
- The complement (constituens), necessary to improve the herbal tea.
In the preparation of the herbal tea, there can be up to six different medicinal plants which, immersed in boiling water, are left to infuse for approximately 5/10 minutes.
Herbal teas can have different therapeutic properties based on the ingredients, such as: relaxing, draining, digestive, etc.
The infusions
they are made with the most delicate parts of plants such as: flowers, fruits and leaves.
In the infusions all the ingredients come from the same plant.
The preparation method also distinguishes the infusion.
The boiling water is in fact poured directly onto the preparation, inside a container which must then be covered to maintain the steam that is generated and to preserve the active ingredient of the drink itself.
Typically, it is left to infuse for 10/15 minutes and the drink is then filtered through a strainer. The infusion also boasts different and varied therapeutic properties, based on the plant used.
