The professional roast knife with a long blade measuring 220 and 29 mm wide or 260 mm and 30 mm wide, with a rounded, sharp and flexible tip, allows you to precisely slice cooked meat.

The blade must be smooth and not serrated, to cut the meat without tearing it and without "squeezing" it to save the flavor. Hardened to approximately 1060°-1080° in W4110 stainless steel with a hardness of approximately 55 HRC.

This unique tempering process gives the blade exceptional strength and a long-lasting edge, capable of tackling any kitchen task.

Ergonomic and Safe Design

The black or green technopolymer handle (or olive wood or deer horn) is designed to offer a comfortable and safe grip, even during prolonged work sessions. Its ergonomic shape reduces hand fatigue and ensures precise control of the knife.

Knives tempered with the special and exclusive "EXTRA HARD" temper which guarantees a high and long-lasting cutting capacity with easy sharpening.
