Acacia Honey
This precious honey is characterized by a very light color ranging from straw yellow to transparent. Its fluidity and transparency are synonymous with a high pollen content and reflect the purity of this monofloral variety.
Thanks to its high natural fructose content, crystallization is rare. Its delicate, floral aroma, typical of acacia flowers, is accompanied by a candy-like flavor and a mellow sweetness that gives it great versatility. This highly prized honey is difficult to crystallize, allowing us to package it in various sizes for every need:

Description
Acacia honey is particularly prized, among the most sought-after in the honey world. Thanks to its characteristics and versatility, it is one of the most popular honeys among both regular consumers and beginners. Its delicate flavor pairs well with a wide variety of foods and makes it suitable for a wide variety of uses.
Acacia pollen generally exceeds 15%.
Flavor: The flavor of acacia honey is unmistakable: as soon as you open the jar, a sweet scent envelops you completely. A true caress for the palate.
Origin: The nectar source of acacia honey is Robinia pseudoacacia, a wild tree found throughout temperate climates in Europe. Being a wild plant, it spreads across uncultivated land and undeveloped areas, hence the importance of protecting these areas.
Harvest Season: The acacia honey harvest coincides with the first days of spring. The acacia flowers fill everything with their intoxicating scent. The beginning of spring is always characterized by particular climatic conditions, which is why night frosts and heavy rainfall affect the flowering and harvest of this unique honey.
Processing Method: Acacia honey is collected from apiaries shortly before flowering ends. This prevents bees from mixing different blooms, thus obtaining pure acacia honey.
Beneficial Properties: Acacia honey, like honey in general, has numerous beneficial properties. It is often used as a sweetener due to its delicate flavor and high fructose content. Acacia honey also has detoxifying effects, is useful for counteracting stomach acidity, and promotes intestinal balance.
Food Use: Acacia honey is primarily used as a sweetener because it does not alter the flavor of foods, and compared to a teaspoon of sugar, it has a greater sweetening power.
It is also highly appreciated with strong, spicy cheeses, which are softened by the delicate flavor of acacia.
