This honey has a strong character and a bold, persistent flavor: for warm palates. Its full-bodied flavor is highly appreciated by honey connoisseurs and is also well received by critics. Its color makes it immediately recognizable to the expert eye.

Description
Chestnut honey is highly appreciated by honey connoisseurs and lovers for its particularly strong and distinctive flavor. The sweet sensation is quickly overtaken by the bitterness, thus appealing to all tastes. Chestnut pollen generally exceeds 90%.
Flavor: The flavor of chestnut honey is predominantly bitter. The palate is first enveloped by a sensation of sweetness that then gives way to the aromatic flavor that pervades and lingers.
It has an intense flavor for palates accustomed to the strong taste of chestnut, but it also finds favor with lovers of bold flavors.
Origin: The nectar source of chestnut honey is Castanea sativa Mill., the tree from which we also harvest chestnuts. It is widespread in continental climates, including in Friuli.
It is a plant often affected by diseases that affect its nectar production as well as fruit production, which is why it is not always possible to obtain honey with a high pollen content.
Harvest season: Honey harvesting begins in June; it is one of the last useful and nectar-rich blooms for bees. The harvest is influenced by summer rainfall: in very dry weather, the honey will be very rich and almost pure.
Processing method: Chestnut honey, being one of the last harvests and not subject to rapid crystallization, is stored in honeycombs until extraction, which occurs very late in the season.
Beneficial properties: Chestnut honey has many widely recognized properties, including a strong antimicrobial effect and can help treat ulcers and infections. Its antioxidant properties and iron content are also higher than those of other honeys.
Food use: Chestnut honey pairs perfectly with delicate, soft cheeses, as opposed to very mature ones. Thanks to its flavor, it can also complement meat, spicy, or particularly sweet dishes, to soften their flavor.
