Honeydew Honey
Honeydew honey is a very special honey. It is the only honey that comes not from nectar but from the secretion of an aphid (usually Metcalfa). It is a very dark and dense honey that is highly appreciated for its appearance and full-bodied flavor. It is suitable for athletes because it is very rich in mineral salts, calcium, and potassium.

Description
Honeydew is often confused with molasses, which it has little in common with. Its dense appearance, dark color, and full-bodied flavor make it a top-quality Italian honey.
Flavor: The flavor of honeydew honey is unique. It has a sweet, cooked taste. The closest similarity is caramel.
Origin: Honeydew honey is not produced from nectar. Aphids feed on the sap of trees or leaves and, after secreting it, deposit it on plants, allowing bees to collect it and turn it into the precious food that is honey.
Harvest season: Honey harvesting begins in July, but varies greatly depending on the aphids.
Beneficial properties: Honeydew is highly prized by athletes for its high mineral, calcium, and potassium content.
Food use: The perfect pairing for honeydew honey is with soft cheeses.
