Dandelion Honey
A very aromatic and refreshing honey with a chamomile aftertaste, harvested from March to May.
Its fine, smooth crystallization makes it ideal for spreading like a soft cream. This honey's color ranges from amber with delicate yellow highlights in its liquid state to a light beige, straw yellow in its crystallized state.
It has a particularly strong aroma and a distinctive flavor that leaves lingering spicy notes on the palate after tasting.

Description
Dandelion is a spring honey and is easily recognized by its strong aroma and aromatic flavor. Its main characteristic is its rapid crystallization, which makes the honey very creamy and enhances its fresh, enveloping sensations.
Dandelion pollen can range from 5% to 40%.
Flavor: The aroma of dandelion honey envelops the palate with fresh nuances that at times recall chamomile, giving way to a spicy aftertaste. It is an intense and persistent flavor.
Origin: Dandelion, also known as "lion's tooth," is a plant that grows spontaneously at various latitudes, so it's easy to find yellow patches scattered throughout meadows. However, dandelion honey production is limited to those few northern areas where large, permanent meadows are found.
Harvesting season: Dandelion honey is harvested at the very beginning of the season, when spring arrives. Temperatures during this period are not always favorable, making it difficult to obtain a significant harvest.
Processing method: Dandelion honey is perhaps the honey that crystallizes most quickly; if you're not careful, you risk the crystallization process starting already inside the honeycomb. Harvesting and honey extraction must therefore take place as quickly as possible.
Beneficial properties (about 30-50 words)
Dandelion honey retains some of the characteristics of the plant it comes from, in addition to the many properties of honey. It therefore boasts diuretic and purifying benefits, making it an excellent ally for our liver.
Food: Dandelion honey pairs particularly well with bitter vegetables. It's also an excellent base for sauces to accompany boiled meats, whether sweet or spicy, to suit everyone's taste.
