Linden honey is one of the most popular honey products in Friuli Venezia Giulia, although the availability of this nectar source is increasingly limited due to the expansion of cultivated areas. It is a honey appreciated by adults and children for its freshness and versatility.
Linden honey can be used both for its flavor and its properties, including rapid crystallization, which makes it suitable for a variety of preparations.

Description
Linden honey is well known for its light color, fresh flavor, and minty aroma. It is enjoyed by all ages, and its coarse crystallization makes it perfect for spreading without dripping. The glucose content is very high and the honey has little moisture.
Lime pollen generally exceeds 20%.
Flavor: The flavor of lime honey is fresh, minty, and refreshing. An unmistakable taste. The aroma foreshadows the flavor and the strong medicinal aroma. The sweetness is not excessive, and the flavor is delicate yet rich in nuances.
Origin: The nectar source of lime honey is divided into two species: Tilia cordata Mill. and T. platyphyllos Scop. These are trees whose flowering often coincides with that of the chestnut tree, sometimes hindering the production of monofloral honey. This honey comes from a very strong nectar, although not very abundant.
Harvesting season: Lime honey is harvested from late May to early July, depending on the area and species. Lime flowers are highly fragrant and attract bees, filling the air with a very characteristic fresh scent.
Processing method: The honeycombs are collected from apiaries during a period when there are several important beekeeping blooms. This makes it difficult to harvest pure linden honey, which often contains traces of chestnut and honeydew.
Beneficial properties: Linden honey is an excellent aid to relaxation, and its calming properties, typical of the plant, are well known. It also has a characteristic emollient effect, which is why it is often used for coughs or as a demulcent. Another unique feature is its digestive benefits.
Food use: Linden honey is preferred over other honeys for sweetening herbal teas and infusions due to its minty, fresh flavor. Pairing it with fresh fruit and fruit salads is a classic, but for those who want to fully savor its aroma, we recommend enjoying it in a cup of warm milk.
