Citrus Honey
Floral, fresh, and fragrant: this is how citrus honey is characterized. Its production is limited to southern Italy, where the native flora allows for a good harvest. It is often difficult to identify a single species of origin, including oranges, lemons, and clementines in these areas, hence the name: citrus honey. It is well-known and appreciated both in Italy and abroad, also for its fine crystallization. Thanks to the valuable collaboration with our southern Italian suppliers, we can offer various formats.

Description
Citrus honey might immediately bring to mind the tartness of an orange or lemon, but in reality it has much more in common with the flowers of these fruits. The aromas it releases are delicate yet very floral, enveloping without being too lingering. It is best appreciated in its crystallized state.
The percentage of citrus pollen is usually less than 40%.
Flavor: The flavor of citrus honey varies slightly when tasted in its liquid or crystallized state. When liquid, it is certainly sweet, aromatic, and enveloping, but it is the creaminess of its crystallization that enhances the overall flavors, lending some pungent notes to the aftertaste.
Origin: Identifying a single nectar source in citrus honey is not always easy. The distinctive character of this honey lies precisely in the encapsulation of the citrus notes of various plants, including orange, lemon, mandarin, citron, and bergamot, releasing an unmistakable blend of aromas and flavors, unique to our southern Italy.
Harvest Season: The harvest period is usually between April and May, when the orange and lemon groves are in bloom, offering a unique sensory experience. Depending on the season, we can harvest citrus honey with varying percentages of citrus pollen, giving us unique flavor nuances.
Processing method: Citrus honey tends to crystallize, not immediately, but a few months after harvest. Therefore, processing must occur quickly to allow for optimal honey extraction.
Beneficial properties: Citrus honey is the perfect choice for a moment of relaxation; its calming properties help relax the head and muscles. It's also very effective for aiding digestion after a meal and cleansing the body.
Food use – pairings: In addition to pairing with herbal teas and teas, which should be served warm to avoid compromising its properties, citrus honey can be an excellent ingredient in sweet and sour preparations, such as sauces and glazes. The perfect pairing is definitely with ricotta or mozzarella; try it and believe it!
