Maple Honey
This is a particularly delicate honey with a sweet character, complemented by light bitter notes that characterize its aftertaste.
Maple honey is highly prized for its remineralizing and purifying properties, characterized by slow and fine crystallization. Its harvest is quite rare and limited in our Friuli Venezia Giulia region, so it may be difficult to always find it in stock. Stock up when you find it!

Description
Maple honey might remind you of its distant cousin, maple syrup, but they have very little in common. Aside from their shared sweetness, maple honey hides a distinctive bitter almond aftertaste that gives it an unmistakable flavor.
Flavor: Maple honey is characterized by its lingering aftertaste, with bitterish nuances. Upon first taste, the sweetness of this honey envelops the palate, providing a warm sensation, before giving way to soft almond notes.
Origin: Maple honey is difficult to harvest; production is limited to our region, Friuli Venezia Giulia. For this reason, availability is limited and varies from season to season.
Harvest season: Maple honey is harvested, when the season is favorable, between April and May, preceding the acacia blossom. Producing this type of honey is becoming more complex each year, partly due to the decline in the area's tree population.
Processing method: It crystallizes relatively slowly, allowing us to store the frames before extracting the honey. Extracting this type of honey is not particularly difficult given its fluidity.
Beneficial Properties: Like most honeys, maple honey has many natural properties, particularly its remineralizing and purifying properties, which are inherent to the plant itself.
Food Use: Maple honey pairs beautifully with fresh fruit, lending a veil that enhances its flavor. Try it as a topping for ice cream or in cold drinks to give it a distinctive touch.
